The highest selling sparkler in the world is Prosecco.
This wine is not aged in oak at all and the second
fermentation takes place in stainless steel tanks,
which helps retain the fresh, fruity style. This is known
as the Charmat or tank method. This is much quicker than
the traditional method enabling winemakers to produce
high volumes. There are other techniques used to produced
sparkling wines and an upcoming name you may come
across is pét-nat, which is short for pétillant-naturel.
The trend for natural wines has seen the
revival of this style, also called the ancestral
method. With this method the winemaker
‘interrupts’ the fermentation process by
bottling the wines early, the residual
yeast and sugar in the wine continues
to ferment, creating the bubbles.
As with other natural wines the
results can vary in style and quality,
with some being a little cloudy and
with a cider-like funkiness.
FIORI DI CAMPO
Produced from organically grown Glera grapes
in the prime Valdobbiadene area around Treviso.
This pale and delicate sparkling wine has ﬁne
bubbles and fresh aromas of green fruits,
elderﬂower and honeysuckle. It is elegantly
light, dry and well balanced. An excellent aperitif
and accompaniment to olives, crudites, cold
meats, light seafood or grilled vegetables.
