With half of Waterkloof set aside as a WWF
Biodiversity & Wine Initiative conservation site,
we are at full vineyard planting capacity now,
so the next step is to maximise yield and quality
from our existing vineyard area. Currently we
are adjusting our viticulture with the aim to
build the natural carbon percentage in the soil.
This is done by minimum mechanical working
of the vineyards, making over 900 tons of
compost and mulching.

It depends on what we are eating but I would
say my current favourite wine in my collection
is a 2015 Chablis Fourchaume premier cru.
I would share this with my husband whilst
overlooking the ocean and enjoying prawns
from the braai.

I have always had a great appreciation for
science and nature. Winemaking brings the
two together, so it made 100% sense to me
to venture into that direction. I am also a big
foodie – wine and food go together so well.
My husband is even a Chef!
