SPARKLING
SPARKLING
It can be difficult to convince people that not all sparkling
wine is Champagne. You will find sparkling wines all over
the wine world. Whether it’s Prosecco in Italy, Cap Classique
in South Africa or Cava in Spain, practically every wine
producing region has their own fizz. In France, outside
of Champagne, sparkling wine is known as Crémant and
you’ll find high quality examples in Alsace, Loire, Bordeaux,
Limoux in the south and Burgundy. Outside of France,
The Southeast of England has been producing award
winning sparkling wines which regularly beat Champagne
in blind tastings, Argentina, New Zealand and even
Tasmania produce high quality fizz.

Specific Region
Most of these use the same method of production as Champagne, which is
known as the Méthode Traditionelle, a labour intensive process where the
base wine is fermented in a barrel as normal, this wine is then bottled and
a yeast and sugar mixture is added which ferments, creating carbon dioxide,
this is absorbed into the wine under pressure, creating the bubbles. Dead
yeast cells called lees left over from the process and these are removed by
gently encouraging them to travel to the neck of the bottle over time using
a process called riddling. The neck of the bottle is then dipped into freezing
water and the sediment disgorged using the built-up pressure before topping
up. The main differences with these wines are the grape varieties used
and the amount of time the base wine spends ageing in oak.
